Bakery Production

The lab is used as a simulated bakery in this course with products being merchandised through the bakery store. Students make items with an emphasis on production speed to help understand the flow of a real bakery. Students are responsible for service case presentation as well as effective merchandising displays and customer service. Prerequisites: first semester baking labs (31-314-315 and 31-314-325).
